Zesty Fire Cider Immune Tonic with Apple Cider Vinegar

A simple, potent immune-boosting tonic made with raw apple cider vinegar, horseradish, ginger, garlic, and spices. This fiery elixir is easy to make and perfect for cold season.

Ingredients

  • 4 cups (960 ml) raw, unfiltered apple cider vinegar with the mother
  • ½ cup (about 60g) fresh horseradish root, peeled and finely chopped
  • ½ cup (about 60g) fresh ginger root, peeled and thinly sliced
  • ¼ cup (about 30g) fresh turmeric root, peeled and thinly sliced (or 1 tablespoon dried turmeric)
  • 1012 garlic cloves, smashed
  • 1 medium jalapeño pepper, sliced (seeds included for extra heat, or removed for milder flavor)
  • ½ medium red or yellow onion, roughly chopped
  • 1 medium lemon, thinly sliced (organic preferred)
  • 2 sprigs fresh rosemary
  • 34 sprigs fresh thyme
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon cayenne pepper (or to taste)
  • ¼ cup (85g) raw honey (or to taste)

Instructions

  1. Prepare your ingredients (15 minutes): Wash all produce thoroughly. Peel the horseradish, ginger, and turmeric. Chop everything into roughly uniform pieces. Smash the garlic cloves with the flat side of a knife.
  2. Layer in the jar (5 minutes): Start with the hard, dense ingredients—horseradish, ginger, turmeric, and garlic. Add the onion, jalapeño, and lemon slices. Tuck in the rosemary and thyme sprigs. Sprinkle in the black peppercorns. Don’t pack too tight.
  3. Pour the vinegar (2 minutes): Slowly pour the apple cider vinegar over the ingredients until completely submerged. Leave about an inch of headspace. Tap the jar gently to release air bubbles. Use a glass weight or crumpled parchment paper to keep ingredients submerged if needed.
  4. Seal and store (1 minute): Screw on the lid tightly. Shake the jar. Label with the date. Place in a cool, dark cupboard for 2-4 weeks. Shake gently every few days.
  5. Strain and sweeten (10 minutes): After infusion, set a fine-mesh strainer over a large bowl. Pour the contents through the strainer. Press on solids with a spoon to extract all liquid. Discard solids.
  6. Add honey and cayenne (2 minutes): Stir in the raw honey and cayenne pepper. Start with less honey and add more to taste. Add more cayenne if desired.
  7. Bottle and enjoy (5 minutes): Pour the finished tonic into clean glass bottles or jars. Store in the refrigerator for up to 6 months.

Notes

Use raw, unfiltered apple cider vinegar with the mother for best probiotic benefits. Fresh horseradish is key for potency. Let steep at least 2 weeks for full flavor. Start with less honey and cayenne, adjusting to taste. The tonic improves with age up to 1 month. Store in refrigerator for up to 6 months.
