Ingredients

Scale
  • 2 ¼ cups (280g) all-purpose flour
  • 1 cup (2 sticks / 226g) unsalted butter, softened to room temperature
  • ¾ cup (150g) granulated sugar
  • ¾ cup (150g) packed light brown sugar
  • 1 large egg + 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups (340g) semi-sweet chocolate chips

Instructions

  1. Whisk dry ingredients: In a medium bowl, whisk together the 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, and 1 teaspoon salt. Set aside.
  2. Cream butter and sugars: In a large bowl, beat the 1 cup softened butter, ¾ cup granulated sugar, and ¾ cup packed light brown sugar together on medium speed for about 2-3 minutes until light, fluffy, and pale in color.
  3. Add egg, yolk, and vanilla: Add the 1 large egg, 1 extra egg yolk, and 2 teaspoons vanilla extract. Beat on medium speed until just combined. Scrape down the sides of the bowl.
  4. Combine wet and dry: With the mixer on low speed, gradually add the flour mixture to the butter mixture. Mix only until no streaks of flour remain.
  5. Fold in chocolate chips: Switch to a rubber spatula and gently fold in the 2 cups of semi-sweet chocolate chips until evenly distributed.
  6. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 72 hours.
  7. Preheat and prepare: When ready to bake, preheat oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  8. Portion the dough: Use a 3-tablespoon cookie scoop to portion the dough into balls. Place them about 3 inches apart on the prepared baking sheets. Roll each ball between your palms to make it tall rather than wide.
  9. Bake: Bake for 11-13 minutes, until the edges are golden brown and the centers still look slightly soft and underdone.
  10. Cool on pan: Let the cookies cool on the baking sheet for exactly 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Chilling the dough is crucial for thick cookies. For softer cookies, bake for 11 minutes; for crispier edges, bake for 13 minutes. Use a kitchen scale for the most consistent results.
