Cozy Brown Butter Apple Cider Cake with Easy Maple Glaze

A moist, tender apple cider cake with nutty brown butter and a sweet maple glaze. This fall favorite is simple to make and perfect for cozy gatherings.

Ingredients

  • Unsalted butter, ½ cup (113g)
  • All-purpose flour, 2 cups (250g)
  • Granulated sugar, 1 cup (200g)
  • Light brown sugar, ½ cup (100g), packed
  • Baking powder, 1½ teaspoons
  • Baking soda, ½ teaspoon
  • Salt, ½ teaspoon
  • Ground cinnamon, 1 teaspoon
  • Ground nutmeg, ¼ teaspoon
  • Ground ginger, ¼ teaspoon
  • Large eggs, 2, room temperature
  • Apple cider, ¾ cup (177ml)
  • Vanilla extract, 1 teaspoon
  • Whole milk, ½ cup (120ml), room temperature
  • Powdered sugar, 1 cup (120g)
  • Pure maple syrup, 3 tablespoons
  • Whole milk or heavy cream, 1–2 tablespoons
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Brown the butter: Place ½ cup unsalted butter in a light-colored saucepan over medium heat. Stir occasionally until it foams, turns golden, and smells nutty (about 3–4 minutes). Remove from heat and pour into a heatproof bowl to cool for 10 minutes.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In a large bowl, beat the cooled brown butter, granulated sugar, and brown sugar with a hand mixer on medium speed until light and fluffy (about 2 minutes).
  5. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  6. With mixer on low, add dry ingredients and apple cider alternately, starting and ending with dry ingredients. Mix until just combined. Then add milk and mix until smooth. Do not overmix.
  7. Pour batter into prepared pan and spread evenly. Bake for 35–40 minutes, until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then invert onto a wire rack. Remove parchment and cool completely (about 1 hour).
  8. Make the glaze: Whisk together powdered sugar, maple syrup, and 1 tablespoon milk or cream. Add more milk if too thick, more powdered sugar if too thin. Add a pinch of salt.
  9. Once cake is completely cool, pour glaze over top and spread to edges. Let set for 10 minutes before slicing.

Notes

Don’t walk away from browning butter; it can burn quickly. Use room temperature ingredients for best results. Measure flour by spooning and leveling. Check for doneness at 30 minutes. Let cake cool completely before glazing.
