  • 3 tablespoons Grass-Fed Gelatin (e.g., Vital Proteins or Great Lakes)
  • 12 tablespoons Raw Honey or Maple Syrup (optional, to taste)
  • 12 tablespoons Lemon Juice (freshly squeezed)

Instructions

  1. Gently warm the elderberry syrup in a small saucepan over low heat until warm to the touch (about 5 minutes). Do not boil.
  2. Remove from heat and sprinkle the gelatin evenly over the surface. Let it sit for 2 minutes to bloom.
  3. Whisk gently until the gelatin is fully dissolved and the mixture is smooth and glossy (about 3 minutes).
  4. Add honey or maple syrup (if using) and lemon juice. Whisk to combine. Taste and adjust sweetness or tartness as desired.
  5. Optional: Pour the mixture through a fine-mesh strainer into a liquid measuring cup with a spout to remove any lumps or foam.
  6. Carefully pour the liquid into silicone gummy molds using a dropper, squeeze bottle, or small pitcher. Fill each cavity almost to the top.
  7. Place the filled molds on a baking sheet and refrigerate for at least 2-4 hours, until firm and bouncy.
  8. Gently pop the gummies out of the molds. If they stick, place the molds in the freezer for 5 minutes to release.

Notes

Do not boil the syrup to preserve beneficial compounds. For a vegan option, substitute gelatin with 1 tablespoon agar agar powder per 1 cup liquid (boil to activate). Store in an airtight container in the refrigerator for up to 2-3 weeks. Freeze for up to 3 months.
