Homemade Elderberry Syrup Recipe for Cold & Flu Season

This homemade elderberry syrup is a comforting, immune-boosting remedy made with dried elderberries, raw honey, and warming spices. It’s simple to make, budget-friendly, and perfect for cold and flu season.

  • 1 cup (120 grams) dried elderberries
  • 4 cups (960 ml) water
  • 1 cup (340 grams) raw honey
  • 2 cinnamon sticks
  • 1-inch piece fresh ginger, sliced
  • 1 teaspoon whole cloves
  • 1 pod star anise (optional)
  • Peel from 1 orange (optional)

Instructions

  1. In a medium saucepan, combine the dried elderberries, water, cinnamon sticks, sliced ginger, cloves, and optional star anise and orange peel. Stir briefly.
  2. Place the pot over high heat and bring to a rolling boil. Once boiling, reduce the heat to low and let it simmer.
  3. Simmer gently, uncovered, for about 45 minutes. The liquid should reduce by about half. If it reduces too quickly, add a little more water. Aim for about 2 cups of liquid remaining.
  4. Place a fine-mesh strainer over a glass measuring cup or bowl. Carefully pour the hot liquid through the strainer. Use a spoon to press down on the berries and spices to extract as much liquid as possible. Let the strained liquid cool for about 10 minutes.
  5. Once the liquid is warm to the touch (like a comfortably drinkable cup of tea), whisk in the raw honey until completely dissolved.
  6. Using a funnel, pour the syrup into clean, dry glass jars, leaving about half an inch of headspace. Screw on the lids tightly. Let the jars cool completely to room temperature before refrigerating.

Notes

Do not add honey to hot liquid; let it cool to warm first to preserve beneficial enzymes. Simmer gently, do not boil aggressively, to avoid bitterness. Strain thoroughly for a smooth syrup. Adjust sweetness to taste. Label jars with the date. The syrup can be frozen in ice cube trays for up to 6 months.
