  • 1 teaspoon vanilla extract
  • ½ cup sour cream, room temperature
  • 1 cup pumpkin puree (not pumpkin pie filling)

  • ½ teaspoon cinnamon
  • 1 tablespoon all-purpose flour
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and salt. Pour in melted butter and stir until moistened. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
  3. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth (about 2 minutes). Add ½ cup sugar and beat for another minute. Add eggs one at a time, beating on low just until combined. Fold in vanilla and sour cream gently.
  4. In a separate bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, and flour until smooth. Stir 1 cup of the plain cheesecake batter into the pumpkin mixture until combined.
  5. Pour the plain cheesecake batter over the crust. Drop spoonfuls of pumpkin batter on top. Gently swirl with a butter knife or offset spatula to create a marbled effect.
  6. Melt white chocolate chips and coconut oil together in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Transfer to a piping bag or zip-top bag. Snip a tiny corner and pipe concentric circles on top of the batter. Drag a toothpick from the center outward through all circles to create a spiderweb design. Wipe toothpick clean between each spoke.
  7. Bake for 35-40 minutes, until edges are set and center jiggles slightly. Cool completely on a wire rack (about 1 hour), then refrigerate for at least 4 hours, preferably overnight.
  8. Lift bars out using parchment handles. Slice into squares with a sharp knife, wiping clean between cuts.

Notes

Make sure cream cheese is truly softened (at least 1 hour at room temperature). Don’t overmix the cheesecake batter to avoid cracks. The toothpick technique takes practice—use a light touch. Watch baking time closely; center should still wobble. Chilling for at least 4 hours is non-negotiable for clean slices. Bars can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
